Freeze drying is a process which removes water from frozen material. Ice sublimes directly to vapou8r avoiding the liquid state.
This takes place under vacuum where the product is generally frozen between - 10°C and - 70°C.
The freeze drying objective is to obtain a very water soluble substance, which when water is added, will exhibit the same characteristics as the original product. Because drying takes place in the frozen state at every low temperatures, it becomes possible to dry e.g. albumen which will remain water soluble. Also, most other chemical compounds remain qualitatively and quantitatively unchanged. Thought freeze drying., products mainly of biological origin such as tissues, tissue extracts, bacteria, vaccines and sera area converted to dry product. This process largely avoids enzymatic, bacterial and chemical changes.
Freeze drying is the most careful process for the conservation of biological products, sensitive tissues ad tissue components.
